Double Melon Popsicles

Ingredients

1/4 cup packed mint leaves

2 cups small honeydew chunks (without seeds)

2 cups small watermelon chunks (without seeds)

1 tablespoon honey

Description

The trick to these juicy honeydew and watermelon popsicles is to use a good amount of mint in the mixture, lending fragrance and flavor to the finished product.

Directions

In a blender, purée all ingredients until smooth.

Pour into popsicle molds, arrange sticks in molds and freeze until solid, 8 hours or overnight.

To serve, run warm water over the molds to loosen, then gently pull out the popsicles.
